I had THREE goals in mind when I made this recipe.

1. (Optionally!) Use the spiralizer. ~ From the {fave raw food kitchen gadgets under $50}

2. Do something different using BRA*ZIL‘s succulent tropical fruits.

3. Make sure it’s easy and delicious, as always! :-)

I had no idea this recipe would turn out so fabulously, but WOW, it sure did! If you can get papaya and avocado where you live, join me from anywhere in savoring the flavors of BRA*ZIL. So here goes… I so hope you enjoy this one! Love, Eva

PASTA INGREDIENTS
3 medium zucchinis
1 large carrot

PASTA INSTRUCTIONS
[Note: BEFORE you start spiralizing, go ahead and cover the cashews and/or Brazil nuts with water to soak a bit longer!]
Spiralize the zucchinis and carrot using the angel hair (or larger pasta) setting. Set aside your “nubs” (the end pieces left over after spiraling) for the blender!

SAUCE INGREDIENTS
1 cup cashews and/or Brazil nuts
1/2 medium papaya
seeds from the FULL papaya!
zucchini and carrot nubs
1 lime, juiced

SAUCE INSTRUCTIONS
1. While preparing the other ingredients for this dish, soak your cashews and/or Brazil nuts.
2. Scoop the papaya meat out of your papaya, and include ALL the seeds in the blender. Set aside the other half for garnish.
3. You should have bits of leftovers from spiraling the zucchini and carrot. Add those to the mix!
4. Discard the soak water from your nuts, and blend everything together until smooth.

GARNISH
1 avocado, diced
1/2 medium papaya, diced
1/2 medium bell pepper, diced
Salt + pepper, to taste

PLATING & BEYOND
You may like to plate this dish with the dressing already mixed together with the noodles (as pictured) or to drizzle the dressing onto the noodles. Add your garnish to the top for a lovely mix of colors, and ENJOY!

SPECIAL NOTES – PAPAYA SEEDS!
When I was pregnant with Lilla I had a noteworthy experience with papaya seeds. On a lovely summer day there I was sitting outside at Viva Verde Cafe, ready to enjoy a green smoothie. The special of the day included papaya seeds, unbeknownst to me. I was overwhelmingly repulsed at the flavor while our (non-pregnant) clients enjoyed the same smoothie without challenge!

I was so surprised at my strong reaction, that I researched papaya seeds more in depth and found out that in many cultures, women who are pregnant completely avoid papaya seeds. Of course I did too after my awkward display of disgust at our own smoothie!

On a somewhat related note (except that it sounds pretty strange to mix children with parasitic creatures)… Ask any earthy woman in the countryside of Brazil and they’ll tell you that papaya seeds are AMAZING for killing parasites.

OPTIONS – IF YOU DON’T HAVE A SPIRALIZER
Check out the {fave raw food kitchen gadgets under $50} for more info. It’s SUCH a great investment if you’re up for it!

If not – no worries!

(Alternative Option 1) Julienne the carrot and zucchinis.
(Alternative Option 2) Using a veggie peeler, peel your veggie lengthwise so you have long fettuccine-like noodles.

Lisa_Daniels_AlfredoI’m constantly looking for recipes which can healthy and raw that are also comforting and visually pleasing. When I think about comfort foods, pasta and alfredo is one of my favorites. For the veggie pasta, I wanted more flavor and texture than the standard zucchini-only raw noodles, so I added golden beet and carrots to the mix. The delicious bonus: a touch of extra sweetness!

Note: This recipe was adapted from the raw alfredo recipe posted at the lovely Rawified blog :-)

SERVINGS
2-3 entrees or 6 appetizers

EQUIPMENT
high-speed blender
spiralizer (optional)
vegetable peeler (alternative to spiralizer)

BLENDER INGREDIENTS
1 1/2 cup cashews, soaked
water (as needed to blend)
3-4 Tbsp fresh lemon juice
1-2 cloves garlic
salt and pepper (to taste)

GARNISH
pine nuts
scallions or chives

SPIRALIZER INGREDIENTS
2 small golden beets
2 medium zucchinis
2 medium-large carrots
2 medium yellow squash

BLENDER INSTRUCTIONS
1. Soak cashews overnight or up to 24 hours.
2. Drain and rinse the cashews, and add them to your blender.
3. Add 3 tablespoons of lemon juice and 1 clove of garlic.
4. Blend at medium-high speed until smooth and creamy, adding as much water as needed for your blender and the desired consistency.
5. Add additional lemon juice and garlic if desired, and salt and pepper to taste.

SPIRALIZER INSTRUCTIONS
1. Spiralize beets and zucchini using the larger spaghetti blade, and the carrots and yellow squash using the smaller angel hair blade.
2. If desired, prior to spiraling, make a small, quarter-inch slice lengthwise down your veggies to create bite-sized pieces.

PLATING INSTRUCTIONS
1. Artfully arrange vegetables on a plate and top with alfredo sauce.
2. Alternatively, combine vegetable pasta in a large bowl with enough alfredo sauce to cover well. Mix. Serve with a bowl of additional alfredo sauce.
3. Garnish with pine nuts and scallions.

SPIRALIZER NOTE
If you don’t have a spiralizer, you can use a vegetable peeler and peel all veggies with lengthwise strips. It takes more time and doesn’t have quite the same effect, but it’s still delicious and comforting!

WANT TO EAT IT WARM?
The alfredo sauce may be served warmed. Just add additional blender time until your desired temperature is reached.

CAREFUL WITH THE GARLIC, FRIENDS!
Raw garlic can be intense, and the flavor develops even more over time. Start out with one clove of garlic. I personally prefer to keep it to one!

IMG_7718I thought it would be fun to add a twist to the traditional veggie pasta and marinara recipe. I had no idea that this could possibly become a favorite recipe and WOW our guests. No one could believe it was a healthy dish and that there wasn’t any traditional pasta!

SERVINGS
2 entree servings

EQUIPMENT
Food Processor OR Blender
Spiralizer!
Knife & Cutting Board

BASE INGREDIENTS
4 zucchinis
1 large carrot

BLENDER (SAUCE) INGREDIENTS
2 cups sun-dried tomatoes, soaked
4 medjool dates, soaked
1 cup sun-dried tomato soak water
3 Tablespoons lime juice
1 teaspoon dried chipotle powder
seeds from tomatoes (see topping instructions)

TOPPINGS
4 plum tomatoes, seeds removed, diced
1 sweet onion, finely diced (about 1/2 cup)
1 Hass avocado, diced

GARNISH
Salt and chipotle powder to taste

PREP ‘N CHOP INSTRUCTIONS
1. Spiralize the zucchinis and carrots and set aside in a bowl.
2. For your toppings, dice the onion. Add half to the bowl with your noodles, and set the other half aside for garnish.
3. Set aside the tomato seeds for your blended sauce, and dice the skins. Once again, add half to your noodles, and set the other half aside for garnish.
4. Note: Wait to dice the avocado until the end so that it stays lovely and fresh!

BLENDER INSTRUCTIONS
1. Soak the sun-dried tomatoes and dates together.
2. Blend all ingredients, then add more sun-dried tomato soak water only if needed to blend.

ASSEMBLY
1. You’ll likely have some liquid that’s gathered with your noodles. Go on and drain the excess liquid for a nicer presentation.
2. Hand mix the blended sauce into the bowl of noodles.
3. Dice the avocado.
4. As garnish, add the avocado and the diced tomatoes and onions you set aside. [You may also prefer to mix them in together, as pictured.]
5. Add salt and chipotle as desired to the top.

ALTERNATIVES AND SUBSTITUTIONS

FOOD SUBSTITUTIONS
Sun-dried tomatoes and/or tomatoes – red bell pepper
Sweet onion – omit or replace with another pungent element like garlic, green onion, or red onion
Carrot – omit or use a peeled beet
Zucchini – cucumber works surprisingly well, but you just want to be more gently with it!
Lime juice – apple cider vinegar, lemon juice, or even about a 1/3 of a preserved lemon (mmm!)*
Chipotle powder – omit or replace with chili powder or paprika for a less spicy marinara
Avocado – omit or replace with a drizzle of olive oil
Dates – raisins or your favorite natural sweetener

*Preserved lemons are lemons that have been preserved with sea salt in a glass jar for 30 days or more. My dear friend {Jan Buhrman} is a favorite guest chef from our Martha’s Vineyard {raw food vacations} and taught me how to make them. They add an amazing depth to raw food recipes! You can {buy preserved lemons at places like LeRoux at Home on Martha’s Vineyard} (made by Jan if you go to LeRoux!) or learn to make them yourself. Side note: Once you get the process down, preserved lemons make great gifts!

IF YOU DON’T HAVE A SPIRALIZER
It’s not the same because you won’t have noodles exactly, however, you can use a common veggie peeler, julienne peeler, or mandoline to have longer julienne-like strips of the zucchinis and carrots.

IF YOU DON’T HAVE A BLENDER
A food processor or food chopper would work just fine for the sauce.

OH, what a fun topic!

As a raw food chef, teacher, and former restaurant owner (SIDE NOTE: We sold Viva Verde Cafe in 2011 when I was preggers with Lilla, but we’re gearing up to maybe reopen soon!?!?!)… I am blessed with some awesome high-end kitchen gadgets. But I joke you not… these under $50 gadgets are all fabulous and as exciting as even the {Holiness of Blenders}.

Whatever your budget size, it’s not so fun to buy gadgets just for them to gather dust!

So I’ve selected my Top 3 Kitchen Gadgets to share with you that are under $50.These are the ones I use almost every day that turn simple veggies into works of art!


GADGET #3: MANDOLINE!

mandolineSo here is the cool thing about the mandoline. I love to cut veggies by hand (well, with a knife anyways!). It’s no big thing. NOW. But back in the day, this really helped me to feel like a pro when I was really just a kitchen newbie + WANNABE pro!

I’m telling you… THIS PARTICULAR MANDOLINE is Ace! It’s the first one I bought (see! check out the note on Amazon.com in my account… before recommending this to hundreds of peeps I first bought this gem in 2007!).

And I gotta say, I lucked out! At a serious steal (seriously?! $20-something for ONEIDA!?), this thing is amazing. Also “up there” with other mandolines that are closer to the $100 range!

Who is it for? Thinly slice apples for {an apple pie or crumble}?! You want to pretty up your salads? Add a touch of bright beet garnish to your dishes? Crinkle cut carrots in a snap? SUPER thinly slice potatoes so you can make (raw! delicious!) zucchini chips or potato chips? Zucchini lasagna or {my easy lasagna bites}? These are the kinds of yummies you can easily make with the help of the mandoline!

New to the mandoline? Seriously. USE THE SAFETY GUARD. And be thankful it comes with it. At least for the beginning. If you do, you’re totally cool and safe! But if you don’t, well, I hope you tend to be lucky. Just saying…

Where to buy Amazon.com has a ridiculous sale on it! You can likely also find this at Bed Bath & Beyond and other large kitchen-specific retailers.


GADGET #2: FOOD CHOPPER!

chopperSo, checking it out from the actual design, there are exactly TWO things that separates Cuisinart’s food chopper from its food processor.

1. The food chopper chops in both directions! You press the button on the left, and it goes one way. Then the button on the right and it goes the other. Lilla and I both think this is the BEST thing ever!

2. It’s smaller. 

So that’s it. Otherwise, same idea. SO you can use this

Who is it for? You’re not making a BUNCH of food at a time, it’s just for you and maybe one other person. You want to create a smooth pate, an easy guacamole or salsa, chop some veggies. Or! Make {the crust for a raw cake or pie}. Mmmmm…

New to the food chopper? This thing is way small for a lot of recipes, like ones that call for several servings. SO in those cases you can split the recipe in half or just do two batches. (You only clean once so it’s not as tedious as it sounds!)

Where to buy Of course,{Amazon.com has it for a great price, as always}. But I’ve also purchased this at Bed Bath & Beyond using a coupon which makes for immediate gratification + about the same price. You’ll likely also find this at some other larger kitchen retailers and some small ones too like LeRoux in Vineyard Haven, Massachusetts.


GADGET #1: THE SPIROOLI!

So… the SPIROOLI. I use this thing as much as my blender. Something about the way it makes those curls and curves and strips changes not just the texture but even the flavor of the food. I don’t know how that’s possible, but it totally does!

Who is it for? You’d rather have gluten-free pasta like {Amber Shea Crawley’s almond butter sesame noodles – you can make this with zucchini!}. You like when your food is pretty. If “done up right” you could consume way more veggies.

New to (the addictive joy of) Spiralizing? Check it out, you. You’ve got options! Thick noodles, check! Thin noodles (think angel hair), check! Or… just make lovely waves out of your carrots or cucumbers! It’s too much fun… mark my words it’s addictive too… !

I feel compelled to write a review on this book because I resisted it for so long yet it moved me so deeply. I heard all these great things about Louise Hay, but then I saw the title. I thought, hmmm, OK, “You Can Heal Your Life.” Sounds cheesy, but I’ll read it when I have more time.

Seriously… seriously… NOW I UNDERSTAND!!

THIS BOOK WAS WRITTEN IN A DIFFERENT ERA

OK, first off, this book was written in 1984. That was back when there wasn’t a ginormous section of self-help books. That’s why it was essentially self-published. To get this book out in the world, Ms. Hay stared Hay House, Inc.

And, do ya know how many copies of this book have been sold? We’re talkin’ a SELF-published book that’s sold more than 50-Freaking-Million copies!!

Of course, since then, Louise Hay has been a huge force behind selling way more books than that. You know the kind… that you read them and you can experience a better life as a result.

THE CONTENT AND STORY LINE

Ms. Hay takes us on a journey, in a particular way. In the beginning, before we start, she gives us a head’s up of what we’ll be doing then she says that she’ll close the book by sharing her story. She hints that it was low, and that anyone can be lifted up by using these ideas, now matter how low the start.

So we wonder… what in the WORLD could have happened to her?!

And then we begin the journey. Ms. Hay takes us step by step on the journey of a client. Every chapter takes us through a part of the process or the body. We even go through resistance to change and HOW to change!

THEN, we go through pretty much every part of life: relationships, work, success, prosperity, and yup, our actual physical body.

HOW CAN I FULLY DESCRIBE WHAT’S INSIDE?!

Here’s how I FEEL when I’m reading it.

I feel like I’m having a deep conversation with a super-loving grandmother who has seen it all and lived to tell the tale. One who has been through a lot and come out stronger, richer, and kinder.

She sees the things I’m doing in life, and she knows it’s not working. She knows me deep down. She gets inside of me with her kind and penetrating eyes. And as she looks at me with SO MUCH LOVE, she writes out an old remedy.

I don’t feel any judgment, just love and respect. So I trust her. And whatever remedy she is writing on that paper, I feel deep down that it will do me no harm.

And then I read the paper, and I laugh. Her suggestions feel simplistic and even a little woo-woo. I mean, WAY out there. But… I trust her… and I have this deep feeling inside that it might just work.

SO, THE RESULTS OF FOLLOWING THROUGH…

Mind you, I have a long life ahead of me, and I have done only a fraction of the exercises… But that said, WOW, seriously. The results have been crazy!

Every single facet of life that I’ve experimented with (NO EXCEPTIONS) has seen positive results. I feel more at peace, I see the positive changes, I know that what I’m doing has value.

A SURPRISE BONUS

Toward the end of the book, there is a whole section she calls “The List.” It’s a list of pretty much every category of sickness in the human body (aches, cancer, diabetes, acne, addictions, AIDS, colitis, eczema, ETC). And with each item, she gives a probably cause and the mindset change to help heal from the inside out.

I feel intuitively that many of these are insanely accurate. And as I read through the challenges I’ve personally had but no longer have thanks to healing my body! (ulcers, acne, eczema, high blood pressure), I find myself nodding my head. YES, YES, YES! This makes sense!!

THE REAL MAGIC IN THIS BOOK

I think it’s important to get past cynicism (like I had!) to allow this book to fully work its magic. The magic is found in taking action. When we take action, that’s when we get the gold!

BY THE WAY, HER STORY…

It’s a jaw-dropper. And she tells it like this crazy things were all gifts. The way she tells it, I feel like all my little challenges are nothings. And like it’s time for me to let go of drama and enjoy life.

And so… I do. With gratitude for Louise Hay and every other person who has helped to pave the way. The story tellers, the health food chefs, the healers… people like Eckhart Tolle and Thich Nhat Hahn helping me to experience the present moment… people like Alissa Cohen who helped me to understand that food is not just about the food… And I could go on, but for now…

I RECOMMEND THIS BOOK. TO ANYONE.

I just want you to know that I recommend this book without any shadow of doubt. If you have any kind of sickness, addiction, or other challenges in your life, and you are ready to heal, seriously, buy the book, read it, and do what she says.

You can trust in what Ms. Hay recommends, and know that part of the foundation of this book is trusting in yourself. So it’s not just a blind trust in someone else. Oh, NO! You get to take responsibility for you :-) but just with the guidebook most of us could really use.

3 stepsI am so stoked to share this learning with you because it has rocked my world, and I think it will rock it over and over again for the rest of my life. FOREVER! This simple 3-step solution to our challenges is a total game-changer. If you’re up for the challenge! (And I think you are…)

WHAT HAPPENED TO LEAD ME TO THIS SOLUTION!

Just a couple weeks ago, I wrote about EXACTLY how time got to be on my side. It was simple… I started repeating (and believing!) the affirmation: “Time is on my side! I have all the time I need!”

Things were going along swimmingly. I was AMAZED. It felt so very good! I found myself in the present moment, slowing down but still Getting Things Done. I couldn’t believe the difference of just saying this simple affirmation.

But then… Carlos left the country for two weeks!! This was a last-minute trip and was originally supposed to be super short… Not two weeks! To say the least, without help with our 2-year-old daughter Lilla, suddenly time didn’t feel much like it was on my side.

BUT SOMETIMES AFFIRMATIONS DON’T MEAN JACK!

I realized… (And this felt like a “duh” moment for me, so forgive me for stating the obvious!)…Affirmations don’t mean Jack if we don’t have the setup or take the action needed to make them true!

FACING UP TO THE TRUTH!

This particular situation was the result of my own choices! I have CHOSEN not to have Lilla in day care. I have CHOSEN for Lilla to be with her Daddy at night after work instead of a nanny during the day. I have CHOSEN to have high standards for Lilla’s safety and environment. I have CHOSEN to plan my life around motherhood.

But what about if you want to stop smoking or drinking and yet continue to surround yourself with people who are smoking and drinking? Like, you want to quit drinking but go to a bar? Or, you want to eat healthier foods and go out to eat at places that serve less-than-optimal food? Or, you want to try out the raw food lifestyle, but you don’t get the training and the fresh foods? Or, you want to exercise but don’t make the time in your schedule?

It’s one thing to say “Time is on my side” or “I’m losing weight/I want to lose weight” or “I want to eat more fresh foods” or “I want to learn to play the guitar”. It’s another thing entirely to say it AND, well, DO IT. Put your wallet and your actions where your mouth is!!

[INSERT SOLUTION!]

I’m not just standing here on my soap box. I have a specific and simple solution for you to make it happen!! And I’m tellin’ you ~ it WORKS!!!!

step 1STEP 1: DECIDE

Decide what it is you want.

SERIOUSLY. Decide it like you mean it. Picture it. Think about WHY you want it. How will it FEEL to have what you want? It is REALLY desirable? What SPECIFICALLY about what you want is so desirable? How IMPORTANT is it to you?

[MY STEP 1: As a momma, I want options. I don't want to depend on just one person, and I want to know that Lilla is safe, happy, and very well cared for when she's not with me. I want to be BOTH a devoted mommy AND to have time and space to be creative with this passion I have for the results of living a greener life!]

Complete this statement: “It would be beyond perfect if…”

What kind of situation would help you to have more success?

By the way (and I think this is key!!)… when it comes to SPECIFIC people taking certain actions (other than you, of course), I recommend leaving them out. Why? In Portuguese they say this “Somente ela e dona da nariz dela!” Meaning: Only she is the boss of her own nose! YOU are the boss of YOUR nose and your life. JUST, YOURS. So you might like to have a particular kind of person or situation to be a help to you, but please don’t leave your choices in the hands of another individual. Lemme tell you, being at the mercy of someone else, it’s not always pretty!

All that said, don’t be shy with the details. Go crazy with them!!

MY STEP 2: It would be beyond perfect if…

…an ENERGETIC, PATIENT, and HAPPY momma who also maybe even has a 2-year-old little girl could come to our house in the mornings?! Some days the kids can play and learn together while I work from another part of the property for a couple hours, uninterrupted. (Maybe I could even do some occasional helper-free gardening or we could garden all together…?!) And then I take a turn to have fun with the kids while the other momma helps get our clothes on the line + the breakfast/lunch mess cleaned up. So when she leaves, we had fun, we ate well, the house is clean, and I got to do some work on top of it all.

Then Lilla and I get to have our afternoon mommy/daughter together. Maybe I work more when she naps, or maybe we snuggle. Either/or. Separately, some nights I work another couple hours but some nights I can take the night off… No pressure because I have help!! AND it’s even during the time of day when I can shoot videos, so now I don’t have to rely on Daddy-O for videos!!!

Believe You Can! + Take ACTION today!

What can you do right now to bring yourself closer to your desired outcome? It doesn’t have to be overnight! BUT, you CAN take inspired + purposeful action to get closer. There is always something awesome you can do TODAY!

MY STEP 3: Write up an ad in Portuguese and go door-to-door talking with people I’ve met asking if they know “her”.

Finally, someone knew her. And like I said… she’s here. And Lilla adores her. Yesterday she brought some books with her, today she brought her (2-year-old! daughter) and we all drank the morning green smoothie together. And she has even more patience than I have. Which is a LOT! It’s just SO amazing!

BY THE WAY, TIME IS (STILL?) ON MY SIDE!

I’m writing this while Lilla is a few steps away with her new nanny. They are cleaning the living room rug together as I write. My husband has been a naysayer for MONTHS about getting a nanny, saying I could never find someone here in the countryside of Brazil who would respect my lifestyle. Hogwash. I almost don’t even believe how perfect she is!

SO, WHAT CAN YOU DO TODAY?

What is it you want? What is that thing you keep meaning to do? Believe it, my friend! You CAN have what you want. “Where there’s a will, there’s a way!”

And just so you know, if you have people in your life who don’t believe in you, what they think or say doesn’t have to be right. It’s only when you believe a naysayer that their words have power!! But YOU have the real power, especially when you don’t hand it over to others!

SERIOUSLY, RIGHT NOW,

If you have something in life that you really want, either commit to time that you know you will be able to give this some real focus, OR take the time now to follow the 3 steps…

1/ Decide what you want.

2/ Imagine your perfect scenario.

3/ Take whatever possible action you can possibly take TODAY to at least get you closer…!

I BELIEVE IN YOU!

You won’t find a naysayer in these parts, my friend! I really believe you can have the life you want, the situations you want, WHATEVER you want really! If you believe it, I believe it!

Almond Sesame NoodlesAlmond Butter Sesame Noodles
Servings: 4 Servings

EQUIPMENT
Measuring cups and spoons
Knife
Small bowl
Large bowl

INGREDIENTS FOR ALMOND BUTTER SAUCE
1/4 cup almond butter
1/4 cup tamari
1 Tablespoon sesame oil
1 Tablespoon rice vinegar
1 Tablespoon {your favorite liquid sweetener}
1 small clove garlic, peeled and minced
1 teaspoon minced fresh ginger or 1/2 teaspoon ground ginger
1 teaspoon sriracha hot sauce (optional)

INGREDIENTS FOR NOODLES

2 (12-ounce) bags kelp noodles, rinsed and drained
2 medium carrots, peeled if desired and cut into matchsticks
1 large red bell pepper, stemmed, seeded, and cut into matchsticks
3 green onions, white and light green parts thinly sliced
1/4 cup dry cashews (optional)
2 Tablespoons sesame seeds

INSTRUCTIONS
1. In a small bowl, whisk together all sauce ingredients.
2. In a large bowl, combine the noodles, carrot, and bell pepper.
3. Add the almond butter sauce and toss to coat.
4. Refrigerate for 2 hours, until chilled, or serve immediately.
5. Garnish with the green onion, cashews, and sesame seeds just before serving.

SUBSTITUTIONS

Almond Butter: use a storebought peanut butter
Tamari: soy sauce, nama shoyu, or liquid aminos
Kelp noodles: 4 medium zucchini or yellow squash, peeled if desired, spiralized
Cashews: dry-roasted peanuts
Sesame seeds: hempseeds

COOKED VARIATION
Toss the almond butter sauce with cooked udon, soba, or other whole grain noodles instead of kelp noodles.

Apple Pie OatmealApple Pie Oatmeal
Servings: 2 Servings

EQUIPMENT
Knife
Measuring cups and spoons
Medium bowl
Dehydrator (optional)
Saucepan (optional)
Food processor (optional)

INGREDIENTS
1 medium apple, peeled, cored, and chopped
1/2 cup almond milk
1/2 cup apple juice
1 Tablespoon maple syrup
3/4 teaspoon ground cinnamon

1/2 teaspoon vanilla extract

sea salt (to taste)
1 cup raw rolled oat flakes or old-fashioned rolled oats
additional almond milk, for serving (optional)

INSTRUCTIONS

1. Combine all ingredients, except the oats and the optional additional almond milk, in a medium bowl.
2. Add the oats and stir thoroughly to combine.
3. Let sit for at least 10 minutes to allow the oats to soak up the liquid.
4. Serve cold, or warm in a dehydrator for 30 minutes or in a small saucepan on the stove over very low heat.
5. Top with a splash of additional almond milk before serving, if desired.

SUBSTITUTIONS
Almond Milk: any other nondairy milk
Apple juice: filtered water plus 1 teaspoon agave nectar or stevia to taste
Maple syrup: {your favorite liquid sweetener}

VARIATION
1. To make “Groatmeal,” soak 1 cup raw oat groats in filtered water for 12 to 24 hours. Rinse and drain the groats and transfer them to a food processor.
2. Add all ingredients (omitting the oat flakes) except the apple, and process until smooth.
3. Add the apple and pulse 2 to 3 times to incorporate.
4. Serve cold, or warm in a dehydrator for 30 minutes or in a small saucepan on the stove over very low heat.

Pizza Kale ChipsPizza Kale Chips
Servings: 4 Servings

EQUIPMENT
Measuring cups and spoons
Knife
High-speed blender
Large bowl
Teflex-lined dehydrator tray
Dehydrator
Oven (optional – if baking)
Baking sheet (optional – if baking)
Fork or spatula

INGREDIENTS
1/4 cup sunflower seeds, soaked for 2 to 4 hours and drained
1/4 cup hempseeds
1/4 cup nutritional yeast
1/4 cup sundried tomatoes, soaked for 30 minutes and drained
1/2 large red bell pepper, seeded and chopped
1 clove garlic, peeled
2 Tablespoons lemon juice
2 Tablespoons filtered water
1/2 teaspoon dried oregano
1/2 teaspoon fennel seeds
1/2 teaspoon sea salt
1/4 teaspoon crushed red pepper (optional)
1 bunch kale, tough stems removed, roughly chopped (6 to 8 cups)
coconut oil (optional – for greasing a baking sheet if baking)

INSTRUCTIONS
1. Combine all ingredients except the kale in a high-speed blender and blend until smooth, adding a splash of water if needed to blend.
2. In a large bowl, combine the kale and the pizza sauce. Use your hands to massage the sauce all over the kale, making sure it’s coated completely.

MAKE IT RAW
3. Arrange the kale in a single layer on aTeflex-lined dehydrator tray.
4. Dehydrate for 8 hours or overnight, until crisp.

MAKE IT BAKED
3. Preheat the oven to 300°F and grease a baking sheet with coconut oil.
4. Arrange the kale in a single layer on the baking sheet and bake for about 15 minutes.
5. Remove the pan from the oven and use a fork or spatula to carefully flip the kale chips over (it’s ok if you miss a few).
6. Bake for 5 to 10 more minutes, watching carefully to make sure the kale doesn’t burn, then remove from the oven and let cool completely.

SUBSTITUTIONS
Hempseeds: additional sunflower seeds or cashews
Red bell pepper: 1 medium ripe tomato, cored, seeded, and chopped
