CucumbersYou’ll often hear people say that cucumbers are comprised mostly of water, making them a great ingredient to include in raw meals to keep you hydrated. This trait, however, does not mean they are devoid of nutrition – quite the contrary in fact! Cucumbers contain healthy doses of vitamins A and C, as well as folic acid. The skin of organic cucumbers is a great source of fiber and many essential minerals, not the least of which being magnesium and potassium. The silica in them is the main reason people put them over our eyes to reduce swelling – it helps with our connective tissues, which hold our bodies together.

Cucumbers have a light but distinct flavor, recognizable in almost any dish. They’re magnificent as a cool summer treat. Try dipping slices in a tasty, gourmet tahini.
