These truffles without the hazelnut in the center are already Un.Be.Lie.Vable. But then, you add the hazelnut for the crunch.

Makes 15 truffles
INGREDIENTS (STEP 1)
1/4 cup cashews
1/4 cup walnuts
1-2 Tbsp coconut crystals or date sugar
INGREDIENT (STEP 2)
3 medjool (or moist, fresh) dates
INGREDIENTS (STEP 3)
1/4 tsp vanilla extract
1/4 tsp coconut oil
1 tsp water
pinch finely ground sea salt
INSTRUCTIONS
- Food process only the cashews, walnuts, and coconut sugar until they are a powder almost like the consistency of the coconut crystals or like brown sugar.
- Add the dates, one at a time. Make sure to remove the pit first!
- Add the vanilla, coconut oil and salt. Finally, add the water as needed for the truffles to easily hold together. If the dates are super moist, less water may be required.
- I used a teaspoon per truffle to easily keep them uniform and rolled the dough around a hazelnut per truffle. Such fun to make these!
