This is a reeeeeally easy almond mayo of sorts. I make one about every 2-3 days and then just keep it in the fridge for sandwiches and wraps. (The wraps pictured here are my Basic Veggie Wraps.)
INGREDIENTS
1 cup almonds, soaked
1 cup water
Juice of 1 lime
Salt to taste
INSTRUCTIONS
Blend well and enjoy. Keeps for several days.

I just made Almond Mayo and it doesnt seem like a mayo? I double the recipe.
It is more like plumy like oatmeal cereal with bit too much water. How do I make it more like mayo? Use mylk bag?
It is tasty and what can I use it for as? to use it up.

Hi Anne! Yeah, lol! I usually prefer to make mayo with cashews, but made this recipe when I was in Brazil and didn’t have much option to use cashews. I wonder why there is so much water, though? You could always add some olive oil, vinegar, and fresh herbs to make it into a nice salad dressing. Actually quite a lot that I am not keen on gets turned into either a/ soup or b/ salad dressing.

I recently checked it as it is in the fridge. The tenture is Not bad! Okay next time I try cashews. Sure I can try my “Grandma’s” salad dressing that is already made of olive oil and vinegar mix with my Almond Mayo.
