This lovely, simple, and filling pudding recipe comes to us from Karolina Eleonóra.
A couple things to note… the coconut milk recipe. I LOVE THIS. It’s sooo easy and a great idea when you can’t easily get fresh coconuts locally. We used to do the same at a raw food restaurant I did some work at, and it’s seriously not thaaat much different.
ALSO, I couldn’t find my mesquite (we haven’t perfectly unpacked the kitchen!) so I just made it without it and put lucuma instead which is nothing like mesquite but was still a fun addition!

INGREDIENTS
1 cup of Coconut milk (process 1 cup shredded Coconut with 2 cups of Water, press through a nut milk bag).
1 Banana
4 tbsp Chia seeds
1 tbsp virgin Coconut oil
1 tbsp Agave nectar or the sweetener of your choice
1/4 tsp real Vanilla
1/2 tsp Mesquite
INSTRUCTIONS
Make the Coconut milk and in a food processor, blend it with the rest of the ingredients until smooth. Let the pudding rest in the fridge over night to fully swell! Decorate with some Bananas and cacao Nibs!

I started playing with chia a couple of years ago since my body doesn’t like flax and I wanted to make sure I was getting my Omegas. I love it. I prefer to grind the seeds in a little coffee grinder for a smoother consistency in puddings. I love coconut milk as a base, but any nut/seed milk will do. And add any flavor – raw chocolate with that banana would be yummy. any fruit you have on hand or is in season will make a wonderful pudding. I also love pears as a replacement for sweetners and they add a smooth creamy consistency – try them with berries and chia for a delicious smoothie or pudding. I also use chia in my green smoothies and find it fills me up for several hours. Some people soak them overnight, but I just throw in the powder or seeds – they soak up liquid quickly so you’ll probably need more than you expect. I’ve learned to put them into the blender last or everything gets so thick it’s hard to work with. I actually make my take-along smoothies very thick then dilute with water when I’m ready to drink – or eat them as a pudding instead. Do be aware that chia is a great fiber – so I suggest starting with a small amount and increasing as you get used to it – do make sure you have plenty of liquid to go with it. Chia is just loaded with good nutrition – truly an amazing superfood.
