{recipe} Broccomole & Mushroom Salad (Get it, BROCC-o-mole? Ha!)

broccomole saladI happen to be obsessed with both {avocados} and broccoli, so this “broccomole” is a match made in heaven for me.

Of course you could have it with crackers, chips… a spoon… or whatever else you’d like. But I was jonesin’ for a good salad when I created this recipe. AND strapped for time. So literally, all I did was slice a few mushrooms, throw ‘em on top of a bed of spring greens, and scoop the broccomole on top. And would ya know it, it was DELICIOUS!

I also (you can see I went a little crazy with it, but I was in the mood!) topped it with salt and black pepper. You may also like to add oil and vinegar, but I was thrilled with it “plain”.

BROCCOMOLE INGREDIENTS

1/4 cup spring onions, diced
1/2 cup cilantro, chopped
1 cup broccoli, finely chopped
1 1/2 cups tomato, medium dice
2 avocados, mashed
1/4 tsp cumin
1/4 tsp salt
1 1/2 Tbsp lemon juice

INSTRUCTIONS Chop as needed and mix in a bowl.
Note: Stores for 1-2 days in an airtight container

SALAD BASE INGREDIENTS

3 cups spring greens
10 mushrooms, sliced

INSTRUCTIONS Put spring greens on the bottom, then mushrooms, and finally top with a huge scoop of Broccomole and salt, pepper, and/or your preferred spiced as desired. Garnish with two pretty pieces of the spring green mix or some cilantro sprigs.
