This pudding is from my good friend Joanna Steven, owner of Sirova, new mom, researcher, and one downright cool raw chic.
Chia seeds are an amazing source of calcium, a mineral which can be a little hard to get in sufficient quantities on a raw food diet. Add to that sesame seeds, and you’ve got more bioavailable calcium than virtually anyone would get in a bowl of dairy and cooked cereal!
INGREDIENTS
1/2 cup sesame seeds
1 1/2 cups water
2-4 T agave nectar
1-inch vanilla bean
1/4 cup chia seeds
1/4 t cinnamon
INSTRUCTIONS
- Blend the sesame seeds, water, agave, cinnamon and vanilla until smooth.
- Strain through a nut milk bag.
- Add more agave, if desired.
- Sesame seeds can be a bit bitter, but as the chia seeds absorb liquid, the pudding will be creamy and mellower.
- Stir the chia seeds in the sesame milk.
- Drink right away, or set aside until thickened.

Hey Emily — You could easily skip the sesame step and double up on the chia. You would just soak the chia, then add the other ingredients. You may not need the blending or nut milk bag in that case!!

Looks fabulously delicious! Do we need to use a vanilla bean? So expensive for me! Could I use liquid vanilla instead?
You could definitely use liquid vanilla. In the USA, two GREAT resources for vanilla beans (I pay about 25-40 cents per bean!!) are: http://beanilla.com and http://organic-vanilla.com — I personally find that vanilla beans are way better AND cheaper when I buy them in bulk. But only in bulk!

More of a general question/clarification. When you mention “Vanilla Bean” in your recipes, do you mean for us to throw the whole thing (or the 1″) in and blend it up, pod and all? Some recipes just want the inside scrapings. Maybe the pods blend up just fine but I have never tried it. Thanks for your help.
