{recipe} Caramel Fudge Brownies

OK friends, you know (right?!) I am obsessed with {Amber Shea’s} {5-minute blondies}. These brownies are right up there (at the top). You have got to try them!!! Lemme know if you have any questions! And if you might make this one with me! :-)

Caramel Fudge Brownies

Caramel Fudge Brownies
Servings: 6-8 medium servings

Measuring cups and spoons
Food processor
6-inch springform pan (or similar size pan)
Mixing spoon or spatula

1 cup walnuts
1 cup pecans
3/4 cup dates
salt (to taste)
1/3 cup cacao powder

1/2 cup soaked cashews
1/4 cup of {your favorite sweetener}
1/4 cup lucuma powder
1 teaspoon vanilla extract
1/2 teaspoon lemon juice
salt (to taste)
1/4 cup coconut oil
2 Tablespoons cacao butter

1. Pulse the pecans and walnuts in a food processor until ground into a fine powder.
2. Add the dates, one or two at a time, pulsing several times in between to incorporate each one.
3. Add the cacao powder and salt, and pulse several more times until the mixture is uniformly combined.
4. Transfer the mixture to a 6-inch springform (or similar-size) pan greased with coconut oil.
5. Use your fingers to press down and tightly pack the mixture in the pan.
6. Refrigerate while you make the icing.

1. Combine all icing ingredients except coconut oil and cacao butter in a blender.
2. Blend briefly to combine.
3. Then, with the machine running, slowly pour in the coconut oil and cacao butter.
4. Blend until the mixture is smooth.

1. Remove the brownies from the refrigerator and spread the icing evenly on top.
2. Return to the refrigerator for at least one hour, or until ready to serve.

Per serving: 214 calories, 16.6g fat (5g sat), 17g carbs, 3g fiber, 3g protein.

GO LOWER-CAL! Press the brownie mixture into 24 mini muffin cups, dividing the icing accordingly as well, to make baby brownies with 142 calories a piece.

GO SUGAR-FREE! Omit your favorite liquid sweetener; add stevia to taste.
