NOTE FROM EVA: This recipe is from Linda Szarkowski, whose weekly raw food boxes are a smashing success in the greater Chicago area. Her Chocolate Crispy Balls aren’t just crispy… they’re crunchy, chewy, and just downright indulgent. These would be great to have along with you when you go anywhere raw food isn’t being served. This way, no matter how the night’s menu unfolds, you will never feel deprived if you skip whatever it is the other folks are eating.
1 cup walnuts, soaked and dehydrated (or just use raw, unsoaked)
1/4 cup pitted dates, packed
1/4 cup sesame seeds
1/2 teaspoon vanilla extract
2 tablespoons raw chocolate powder (can substitute cocoa or carob powder)
1 tablespoon coconut oil, liquefied at room temperature or in warm water
1/4 cup dried goji berries
pinch solar-dried sea salt
- In a food processor outfitted with the “S” blade, process walnuts until coarsely ground.
- Loosely separate the dates and add them to the walnuts, add the sesame seeds and
process until mixture sticks together.
- Add the vanilla extract, chocolate powder, coconut oil, goji berries and salt and process until well mixed.
- Roll into balls, using 1 teaspoon measure for each ball. Chill in the refrigerator for at least one hour.
Store in an airtight container in the refrigerator.
