{recipe} Chocolate-Dipped Strawberries

This recipe is from Nudie Foodie (find her on Facebook: Facebook.com/NudieFoodie), whose tasty journey to develop a recipe book leaves my mouth watering every time I see one of her new foodie creations. Her Chocolate-Dipped Strawberries are, as Nudie says, “already a pairing of light and simple Strawberries meet decadent and complex Chocolate, but add Valentine’s Day (a celebration of the fluttering of two Hearts) to the mix, and you’ve got a recipe for one Steamy Night!”

Of course they’re great for the Day of Love, but you can indulge yourself with these yummies any day of the year! :) And with all the notes Nudie made on everything chocolate (in her usual Nudie style!), your mouth will be watering before you even grab your ingredients!

INGREDIENTS

  • 1 Large container (1 lb.) Fresh Strawberries
  • 1/2 cup chopped Chocolate/Cacao Paste* (Raw)
  • 1 Tbsp. Coconut Oil, liquified
  • 1 tsp. alcohol-free Vanilla flavor
  • 1 packet Sweet Leaf Stevia and/or 1 Tbsp. Agave, Coconut Nectar, or Raw Honey**
  • pinch Himalayan Pink Salt
  • 1/2 tsp. Lecithin powder (optional, used to thicken and emulsify)

* Cacao paste can be purchased in specialty shops or online, including at some of the links listed below:

** Note: Honey is not a vegan product.

INSTRUCTIONS

  1. Rinse Strawberries and place on a clean towel to dry thoroughly. Line a baking sheet with parchment or wax paper (a dehydrator tray with teflex also works).
  2. Finely chop the Chocolate/Cacao Paste and place in a low dish. Place dish in the dehydrator, set at 105 degrees. If needed, the Coconut Oil may also be placed in the dehydrator to liquify. Allow Paste to “melt” completely, stirring occasionally to distribute heat.
  3. Remove melted Chocolate and whisk in liquified Coconut Oil, Vanilla, Stevia/Sweetener, and Pink Salt. Begin with only 1 packet of Stevia or 1 Tbsp. Agave/Coconut Nectar/Honey, and sweeten to desired taste. I typically use only 1 packet of stevia, as I crave a truly bitter Chocolate.
  4. Dip the strawberries in the melted Chocolate (before it cools!), leaving the top of the strawberry and stems bare (allowing a little sexy strawberry shoulder to show).
  5. Place each dipped Strawberry, one at a time, on lined baking sheet. Spread approx. 1 inch apart.
  6. Allow Strawberries to cool completely and harden for a few hours at room temperature. For longer storage, keep refrigerated.
  7. Savor and Enjoy!

What to do with the extra chocolate?!TIP: If you’ve misjudged your Chocolate-to-Strawberry ratio and therefore have leftover Chocolate Dip, place back in the dehydrator for a few minutes while you scurry to find anything and everything “dippable”…

Think Chocolate-Covered (dried) Mango strips, Raisin and/or Nut Clusters, Pineapple, Papaya strips, Blueberry Chocolate Clusters… need I go on?
