{recipe} Coconut Dream Smoothie

Coconut Dream Smoothie

I was so pleased when I discovered that such few ingredients could make something so ridiculously good. Not only that, but a friend even lost several pounds over the course of the week when she was drinking these daily. You may like to know that coconut, even though it seems counter-intuitive considering the large percentage of fat, often has the power to eliminate extra weight.

INGREDIENTS

  • Water/Juice of 1 young Thai Coconut
  • 1/8 cup coconut nectar or 1 frozen banana
  • 1 cup ice
  • 1 vanilla bean, scraped (optional)
  • Pinch salt (optional)

INSTRUCTIONS

  1. BLEND!
  2. And enjoy — we had this 3 days in a row last week. It is SO GOOD! I dare you to not drink the whole thing. (We have no idea if it is good later, never saved any).

HINTS & TIPS

  • Fresh vanilla beans are amazing but so very expensive in grocery stores. I find that the cost averages about $5 per bean in the store, but buying online in bulk online costs me closer to $1 or less per bean.
  • If you do not have a high-speed blender, you’ll want to cut the vanilla open and use a “butter” knife to get the thousands of small beans out of the inside. If you do have a high-speed blender, you can actually throw the whole thing in there, bark and all.
