This recipe from Kate Magic is quite the interesting take on fries, and not something I had ever thought about.

Quick notes outside of the UK, courgettes are the British way of saying “zucchini”. Most of us should be able to easily find zucchini/courgette in our area, which is splendid!

Courgette Fries

Potatoes were the last cooked food I stopped enjoying. These are reminiscent of fries how we do them in the UK – greasy, covered in salt and vinegar, and, if you eat them straight out of the dehydrator, just warm enough.

500 g (3) courgettes 1 lb
1 tbsp Balsamic vinegar
2 tbsp olive oil
1 tbsp tamari
2 tbsp Atlantic sea salad

Slice your courgettes into fat chunky chips by topping and tailing, slicing them in half widthways, and then slicing each half lengthways into quarters. Put them in a shallow bowl or serving dish, pour over the vinegar, oil and tamari, and toss in the sea salad. Marinade for twelve hours, stirring at regular intervals to make sure the courgettes are evenly coated. They should absorb most of the liquid. At the end of twelve hours, lift your fries separately onto the drying trays of your dehydrator. Any leftover marinade can be used as a salad dressing. Dry the fries for 6-8 hours. Eat warm straight from the dehydrator – they’re not half as convincing when they’re cold.
