This SERIOUSLY is better than ranch but sooo much like it. It’s crazy! I love to have this on hand to “dress” up my salads!!
INGREDIENTS
1 cup cashews, soaked for 2 hours
and drained
½ cup water
¼ cup lemon juice
¼ cup apple cider vinegar
2 dates, soaked
Date soak water
2 large cloves garlic
2 T red onion
1½ T Herbamare
½ oz. Irish moss (optional!)
—
1 T parsley, diced*
½ t dill, diced*
1 T green onion, diced*
* hand mix into blended dressing
INSTRUCTIONS
Blend all ingredients until super smooth. Then hand mix the diced ingredients. Ideally, this will sit in the fridge in an airtight container for at least an hour or two to congeal before eating. But it will be yummy straight up too!!

Why do the nuts need to be soaked? I don’t get it since I am a raw newbie.

Ooooh, I love Newbies and Newbie Questions! Glad you’re here! <3 Cashews don’t have to be soaked for anything, actually. BUT in this recipe it really helps to get your dressing nice and creamy — they’ve already been softened up and so blend much more fully without much effort. If you don’t yet have a Machine like a Vita-Mix, the soak will help immensely. Even with the Vita-Mix it’s a huge help!

Eva I really think this is way BETTER THAN RANCH!!! For a few days I was craving a good Ranch dressing and I ran into this recipe and sure enough it was yummy… By the way, I used the Irish Moss and I was very happy with the result. It was really inspiring to use Irish moss in savory dressings (as silly as it may sound I had stored in my pastry section and never thought of it in salad dressings but it makes perfect sense… and takes the silky texture to another level, plus adds a bit of nutrition… I loved it!! I just made this and it didn’t turn out as white as the picture shows. Did I do something wrong?
I couldn’t find any Irish Moss so I used agar agar. It tastes good and I’m sure after it sits it will be even better. Thanks, Heidi

I have GOT to post a new picture that is not a stock photo! BUT I will tell you — mine does still come out looking VERY close to that white ~ and the picture I DO actually now have on my computer from a pro photo shoot was quite similar as well… How are your cashews? Are they dark in color at all or a very light variety? If they taste good, you’re fine!! I hope the agar agar worked well — and would love to hear if it continued to thicken after sitting a bit!!

The cashews were not too dark, maybe it was the dates and the nuts together that made the beige color. It was yummy and even my daughter (she’s 10) keeps asking for some, so it was a hit.
I had never used the agar agar and I will have to do some research before I do it again to get the full effect. It wasn’t stand up a spoon in it thick, but it was not runny.
I will definitely keep this recipe on hand and make it often.

Oh my goodness! I saw the link to this on Facebook (via Don’t Fear the Vegan). I had everything in the house (except I substituted agar agar, which worked great), so I gave it a try. I am so happy! I have never liked any of the recipes I have tried for homemade vegan ranch. This one is yummy, and the color and texture are great! Thanks!
