{recipe} Creamy Cucumber Dressing

This amazing recipe was gifted to us via the beautiful life of Anna Sinclair Tipps. Anyone have a picture or want to make it and snap a lovely one? If I can get some dill at the farmers market, I might just make it myself for a photo. It sounds SO GOOD and came very highly recommended!

This is a divine dressing & makes a delicious dip for parties or anytime.  Serves 8-10 as a dip, or keep on hand to use in salads.

INGREDIENTS

  • 1 small cucumber peeled and cut into large pieces
  • 1 ripe avocado
  • ¾ cup cilantro leaves and stems
  • 2 green onions
  • 3-4 basil leaves, fresh
  • ¼ cup flax oil
  • ¼ cup extra virgin olive oil
  • 2 tablespoons honey*
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon sea salt
  • 1 teaspoon dill, fresh

INSTRUCTIONS
Place all ingredients in a blender or food processor.  Blend until completely smooth and creamy.  This is just wonderful served over a bed of fresh spinach leaves with tomatoes and orange segments, or use as a dip with fresh veggies.
