Grinding up gojis into your chocolate mixtures makes amazing results. Gojis have a naturally healthy low-glycaemic sweetness which means you don’t have to add so many powders and syrups to your chocolate mix. Coconut chips in chocolate are really beautiful; when you slice through the slab they make divine patterns.
INGREDIENTS
- 220 g or 1 3/4 cups coconut butter
- 200 g or 1 1/2 cups cacao nibs
- 150 g or 1 1/2 cups gojis
- 150 g or 1 1/2 cups mesquite
- 3 tbsp agave
- 50 g or 1 cup coconut chips
- 1 tsp Etherium red (optional)
INSTRUCTIONS
Melt the butter first. Grind up the nibs with 50 g (1/2 cup) gojis in a high-power blender or grinder. When fully ground, add in the butter and agave and blend again for a minute. Once it’s amalgamated, add the mesquite and Etherium red and blend one more time. Stir in the remaining 100 g (1 cup) gojis and the coconut chips by hand. I usually do this in the blender jug, but you can transfer to a bowl if you find it easier. Spoon into a tray and leave to set in the fridge for three hours. Once it’s set, turn out and cut into squares, six across by six down. Will keep in the fridge for up to eight weeks.
