I was thrilled a couple days ago to find locally grown fresh lavendar flowers. I had no idea what to do with them, but I knew we’d find something fun.
Today the other women on the vacation here with me on island got as giddy as I did when one of them (I think it was Kristel?) suggested lavender CHOCOLATE. Trouble was, we weren’t really sure how to do it! We went searching on the web and found out the method… then we jumped right in playing with measurements. Here is about what we came up with:
INGREDIENTS
3/8 cup melted cacao butter
1/4 cup coconut nectar
3/8 cup cacao powder
1 Tbsp lavender flowers
pinch salt
INSTRUCTIONS
Blend the cacao butter, coconut nectar, pinch salt, and lavender flowers together until smooth. Pour into a bowl and add the cacao powder. Whisk it smooth with a fork, then pour into molds and freeze for a few minutes to harden.
Optional: Add a few bits of lavendar flowers to the bottom of each chocolate serving. (We did this and liked it!)
Any other food ideas on what to do with fresh lavender?? Let us know if you have any — we have plenty left and would love to make some magic with it!!

There used to be a restaurant that I loved that served lavender lemonade. It was so good. I haven’t made it yet but I imagine they did a lavender infusion and combined that with some good homemade lemonade.
Thanks for the idea Ali!!! We’re going to play with it today!!! We have lots of lemons too… and in the summer… this sounds brilliant!!!

There’s an ice cream shop near my house that makes the most incredible honey, vanilla, lavender ice cream. I put lavender in a raw ice cream, but made it with coconut water, which overpowered the lavender. I’d like to try it again though, with a cashew and water base.
Lovely Laura! This is making me think of milkshakes instead for some reason… Hmmmmmmmmmmmmmmm. We are now on the idea of lavender with cardamom, which I think would be nice with an ice cream! Thank you for sharing!! xxo Eva
