A beautiful parfait with four layers of traditional Autumn flavors – pecan & cinnamon, pumpkin, cranberry, and a ginger whipped cream topping. This is an easy recipe to make, with four different mini-recipes to layer, and a perfect dessert for your Thanksgiving or Holiday table. Pumpkin Parfaits
Servings: 5 medium parfaits

EQUIPMENT
Can opener
Measuring cups and spoons
Medium mixing bowl
Food processor
Blender
Small bowl
Spoon or spatula

INGREDIENTS FOR PUMPKIN PUREE
3 – 15 oz. cans organic pumpkin puree
2 – 3 teaspoons ground cinnamon
1/4 cup {your favorite liquid sweetener}
1/2 medium sugar pumpkin (optional – see SPECIAL NOTES section at the bottom)

INGREDIENTS FOR GINGER WHIPPED CREAM
1/2 cup cashews, soaked overnight, rinsed and drained
1/2 cup filtered water
1/4 cup coconut oil, melted
2 Tablespoons ginger, grated on microplane
2 Tablespoons {your favorite liquid sweetener}

INGREDIENTS FOR CRANBERRY LAYER
1 cup cranberries (fresh or frozen – thaw first)
1/4 cup {your favorite liquid sweetener}

INGREDIENTS FOR PECAN LAYER
1 cup pecans
1 teaspoon ground cinnamon
2 teaspoons raw sugar (optional)

INSTRUCTIONS FOR PUMPKIN PUREE
1. Place pumpkin in medium mixing bowl.
2. Add cinnamon and your favorite liquid sweetener and blend.

INSTRUCTIONS FOR GINGER WHIPPED CREAM
1. Place cashews and water in blender. Blend until smooth.
2. Add melted coconut oil, grated ginger and your favorite liquid sweetener. Process until well blended.
3. Transfer cream to small bowl and chill until set in refrigerator.

INSTRUCTIONS FOR CRANBERRY LAYER
Place cranberries and agave in food processor and process until puree. I like this layer to be a bit chunky, so don’t over-process here.

INSTRUCTIONS FOR PECAN LAYER
1. Place pecans and cinnamon in food processor. Pulse until chopped. I like this layer chunky too. Be careful to not over-process the pecans.
2. Mix in raw sugar by hand.

INSTRUCTIONS TO ASSEMBLE PARFAITS
1. In a medium parfait glass, place a layer of pecans.
2. Top with a layer of pumpkin puree, a layer of cranberries, then a layer of the ginger whipped cream.
3. Repeat layers, if desired.
4. Top with a sprinkle of pecans.

SPECIAL NOTES
You can use 1/2 of a medium sugar pumpkin to create your own puree instead of using canned pumpkin. Peel, seed and cut the pumpkin into chunks. Place pumpkin chunks, cinnamon and your favorite liquid sweetener in food processor or blender. Pulse until pureed, adding 1/4 cup to 1/2 cup of water, as needed. Scrape down the sides of your food processor often while processing. You’ll need approximately 6 cups of pumpkin puree.
