This might be one of our more exciting recipe posts for the simple reason that, honestly, it’s crazy just how much you have to pay for packaged nut and seed butters. TOTALLY unnecessary! This raw, vegan pumpkin seed butter recipe comes to us from Callie England.
Guess what, make a few minor changes to which oils you use, and you can replicate this for almost any seed or nut! YEAH! So put away your credit cards and grab the piggy bank instead on your nut and seed butters!
INGREDIENTS
2 cups raw pumpkin seeds
3 Tbsp walnut oil
1 Tbsp pumpkin seed oil
INSTRUCTIONS
In a high-speed blender, blend all ingredients until smooth. You will need the pusher attachment (Vitamix) for this process. Place in a glass jar and store in the refrigerator.

How long do butters like this stay okay in the fridge?
They should be fine even for up to a few weeks or a month!
Can you use flaxseed oil, or any other kind of oil instead?
TOTALLY, just make sure you are thinking of the flavor of the nut versus the flavor of the oil!
In general, what are the best oils to use, health wise? (Which ones are bad?)
The oil question is kind of a tricky one — do you know some people suggest not using oils AT ALL? (The reason is that when you buy oil, it has been separated from the fiber and other parts of the nut or seed, and it is therefore no longer a whole food with all helpful parts of the food as it began originally!)
BUT, I believe that for most of us, that’s not something necessary to think about in the beginning or even anywhere NEAR the beginning of this journey… unless we are feeling anything less than STELLAR.
Sometimes we need the oil to keep everything moving as before we were eating all raw — and we really have to honor the transitional period!
SO, that said, you can actually make butters WITHOUT oil at all, just using the whole seed/nut in the same idea as above but putting a LOT more time into it and possibly even adding water if necessary for your blender. [Noted from Callie via FB that adding water could cause issues with the shelf life -- I have not had issues with that -- BUT I don't keep nut and seed butters for long! They're just too fun to use! So keep her warning in mind if you were to use water!]
In any case, I find that as long as the flavor is not “strange” together (say, olive oil with almond butter!), any raw/organic/cold-pressed oil is going to have some health benefits. They all have different benefits and can be useful in different ways to our bodies.
