Let me say first, that I make something similar with walnuts that is pretty much just chocolate-covered walnuts, and that when I make them, everyone FREAKS OUT. I mean, SERIOUSLY FREAKS OUT. So, then you take this recipe from {Natalia KW} and add the texture of the coconut flakes, and I’m out of my mind wondering “why didn’t I think of that?!”. SERIOUSLY, this recipe is easy and will be sooo worth your while! I PROMISE!
What a great way to kick off a week with Natalia! We have six more of her recipes incoming, and the thing I love love love about them ALL is the brilliance and simplicity Natalia puts into them. She is SO GOOD at keeping it simple and yet sharing recipes that are just divine. Like the cheeseball I am, I was so excited thinking about all these recipes, that I just took a break from typing to clap my hands!

makes 16 pieces
INGREDIENTS
- 1/4 cup coconut oil (melted)
- 1/4 cup raw agave nectar
- 1/3 cup cacao powder
- pinch of Himalayan salt
- 1 cup walnuts (soaked and dehydrated if you’ve planned ahead)
- 2/3 cup coconut flakes
INSTRUCTIONS
- In a medium bowl, whisk together the coconut oil, agave, cacao and salt.
- When the chocolate is smooth, add the walnuts and coconut to the bowl.
- Mix well to coat all of the nuts and coconut.
- Use a spoon to create clusters about 2″ in diameter and place onto a wax paper lined baking sheet.
- Freeze 30 minutes or until the chocolate has hardened.
- Enjoy–YUM!

AWESOME!!!!! SO glad when the husbands like stuff too. I really don’t get why, but there seems to be a pattern that many (not all!) are not picky when it comes to packaged junk but when you bring out the healthy, vibrant foods they turn up the noses.
That doesn’t seem to happen with chocolate though! Ha!

So excited to try! 2 questions – are coconut flakes always raw (does it usually say? brand suggestions?), and do you have an alternative suggestion for coconut oil… unfortunately I don’t do well on coconut oil. Thx, spunky momma!
NO, coconut flakes are not always raw. I’m lucky that they have them at my local organic grocer that are really raw. Most of the time you have to look out for a special order, unfortunately. BUT at least getting unsweetened is a million times better than the sweetened flakes. You’ll often see the “Let’s do organic” brand at the store, which I’ve used before and been happy with but am not really sure that it’s raw…
And an alternative to coconut oil would be cacao butter ~ it melts at about the same temperature and will actually give you a slightly more solid consistency. I sub those out for each other all the time!

P.S. I meant do you have a suggestion for this recipe for an alternative to coconut oil… I remember you teaching me before that oil substitutions are based on what you’re making (makes sense!). But REALLY want to try these. Thank you. ♥
