This raw broccoli salad recipe comes to us from Tess Masters aka The Blender Girl.
INGREDIENTS
6 cups organic broccoli
2 cups scallions/spring onions
2 cups celery
1/2 cup raw sunflower seeds soaked and dehydrated
1/2 cup raw pumpkin seeds soaked and dehydrated
1 cup organic blanched almonds chopped up into slithers
INGREDIENTS (FOR DRESSING)
1 cup raw vegan mayonnaise
2 1/2 Tbsp apple cider vinegar
1/2 tsp Celtic sea salt
2 1/2 Tbsp fresh lemon juice
2 1/2 Tbsp agave nectar
INSTRUCTIONS
Chop up the broccoli, celery, and spring onions into small bite size pieces.
Pulse the almonds in the food processor or cut into slithers.
Throw the dressing ingredients into your blender ( I always like to use my Vitamix ) and blend until smooth and creamy.
Toss through half of the dressing and then add gradually until dressed for your success! YUM!

Hey Scott! I’m not sure which one Tess was using, but I always have something like this around. Try 3 cups soaked cashews, 1 1/2 cups water (or more if needed for your blender), salt to taste, apple cider vinegar to taste, and VOILA! Raw vegan mayo. Just blend it and change to your liking… so easy… so good… and I always have that or something similar around to throw into dressings, salads, even to dip veggies in as I please.
