NOTE FROM EVA: This recipe is from Linda Szarkowski, whose weekly raw food boxes are a smashing success in the greater Chicago area. Her Cheezy Spinach Soup is a winner on so many counts. Never could there be a better way to feel like Popeye so painlessly!
4 cups Pine Nuts, soaked 1 hour, drained
1 cup Cashews, soaked 1 hour, drained
3/4 cup lemon juice
1 cup water
1/2 cup nutritional yeast
1 teaspoon sea salt
Blend all ingredients until smooth and creamy.
1 cup Cheeze
1/4 cup chopped fresh basil
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon sea salt
Spinach – several handfuls
Water as needed to blend and thin
Blend all ingredients, adding as much spinach as you can fit in your blender.
Feel free to add more spinach once it’s blended down (I put in 4 large handfuls).
NOTE FROM EVA: This is a fabulous soup to blend the two layers together at the end, after already combining separately. This will make a very pretty swirl, with 2 colors, for extra lovely presentation. Just make sure you store the two layers separately if you have more than you can eat/share in one sitting!
