This raw vegan shaved asparagus recipe comes to us from Callie {rawxy} and is truly lovely. I never found asparagus to be so appealing in my whole life! (And I even LIKE asparagus! Haha!)
INGREDIENTS (FOR SALAD) (Serves one.)
1/2 bunch asparagus
5 radishes
INSTRUCTIONS (FOR SALAD)
Wash asparagus and trim ends. Using a vegetable peeler, peel the stems of the asparagus spears – starting under the bract. Save the bracts (tops) and set aside. Thinly slice radishes.
INGREDIENTS (FOR MUSTARD SEED VINAIGRETTE) (Makes about 6–8 ounces)
1/3 cup fresh orange juice
2 Tbsp white wine vinegar
1/2 tsp brown mustard seed
1/4 cup olive oil
dash of stevia (maple syrup, dates, agave, etc…)
INSTRUCTIONS (FOR MUSTARD SEED VINAIGRETTE)
Blend all ingredients in a blender. Store in an air-tight jar.
INGREDIENTS (FOR ASSEMBLY)
Sea Salt
Coarse Pepper
Orange Zest
Asparagus Bracts
INSTRUCTIONS (FOR ASSEMBLY)
In a large bowl, toss shaved asparagus, sliced radishes, coarse pepper, sea salt and vinaigrette. Plate salad and garnish with asparagus bracts and orange zest.
