This raw cookie recipe comes to us from Amy Levin.
INGREDIENTS
2 c raw rolled oats
1 c tiana coconut flour or almond flour (lower in fat)
3 medium braeburn apples, peeled, cored and chopped
½ c coconut oil, melted
½ c dried cranberries, soaked in water for 2 hours
¼ c orange blossom honey or light agave
Zest and juice of 1 orange
4 drops orange essential oil
1 tbsp cinnamon
1 vanilla pod, de-seeded
1/8 tsp freshly ground nutmeg
1 tsp ground cardamom
Pinch allspice
Pinch salt
INSTRUCTIONS
Combine braeburn apples, sweetener, spices, salt, vanilla seeds, orange juice and orange oil in a high speed blender and blitz until smooth and creamy. In a medium bowl combine oats, coconut flour, cranberries and coconut oil and mix to combine. Add spiced apple puree and mix very well. Roll into balls and flatten onto a teflex dehydrator sheet, dehydrate on 145 for 1-2 hours, continue dehydrating at 115 for another 3 hours, then remove from teflex on put on the mesh sheet, and dehydrate further 8 hours or until crisp outside and soft inside.

So are these still considered raw since the dehydrator temperature is 145 the whole time? They look great. Happy Thanksgiving!
Great question Annette! I edited the instructions even though it’s Amy’s recipe. I know this recipe works great using the dehydrator at 145 only for the first hour or two. (Which IS still considered raw; the higher temperature for a short time does NOT bring the FOOD to that temp, only brings it to 115 faster. I’ve read detailed info and testing on this from Dr. Gabriel Cousens.)
