{raw vegan recipe} Strawberry Chia Pudding

This pudding recipe comes to us from Karolina Eleonóra… and you know what? I haven’t tried it yet! I do my best to try recipes before sharing them, so I’m taking a chance here, I realize. BUT, I do trust Karolina’s skills in the kitchen, and it looks lovely, and I really really really wish I’d already tried it… so I’m sharin’ it anyways!

It’s SUPER EASY, but I can’t seem to find decent strawberries. And with chia, I kid you not, I often put 1 part chia to 10 parts water and just soak then drink the sludge. Somehow that’s interesting enough for me. Mostly because I’m obsessed with chia. (Seriously, if you haven’t tried it… you’ve got to!!)

INGREDIENTS

500 g / 18 oz of Strawberries
2 tbsp Agave nectar or the sweetener of your choice
4 tbsp Chia seeds

INSTRUCTIONS

In a blender or food processor, process the Strawberries into liquid. Add the Agave and Chia and mix again. Put in the fridge to rest. (I find that letting it rest over night makes it perfect as a breakfast, and by then you’ve also got a really thick pudding.) Decorate with Hemp seeds, nuts or what you prefer.
