{recipe} Stuffed Tomatoes with Avocado Medley

AVOCADO MEDLEY INGREDIENTS
1 ear of corn
1 avocado
1/2 red bell pepper
1/2 orange bell pepper
1/2 medium red onion
2 T cilantro, finely chopped
1 t salt
1 t chili powder
1/2 t cumin

EQUIPMENT
Food processor (definitely optional)

INSTRUCTIONS:

  1. Put all ingredients together (except plum tomatoes) in a food processor or better yet, chop and mix by hand in a bowl.
  2. Cut a thin strip off the bottom of the tomatoes so they will easily stand up, and split them in half. You would to have two halves that can be stuffed with the medley. Make sure you do NOT cut the part where the stem comes out of the tomato ~ cut below it instead ~ and then remove the insides carefully so that the bottoms are still sealed.
  3. Fill the tomatoes with the avocado medley, and garnish with a bit of cilantro.

Another option for how to use the avocado medley — see the picture at right? All I did was scoop the medley on top of spring greens then top it all off with some oil and vinegar. Then, VOILA, a whole different meal was created. :-)
