AVOCADO MEDLEY INGREDIENTS
1 ear of corn
1 avocado
1/2 red bell pepper
1/2 orange bell pepper
1/2 medium red onion
2 T cilantro, finely chopped
1 t salt
1 t chili powder
1/2 t cumin
EQUIPMENT
Food processor (definitely optional)
INSTRUCTIONS:
- Put all ingredients together (except plum tomatoes) in a food processor or better yet, chop and mix by hand in a bowl.
- Cut a thin strip off the bottom of the tomatoes so they will easily stand up, and split them in half. You would to have two halves that can be stuffed with the medley. Make sure you do NOT cut the part where the stem comes out of the tomato ~ cut below it instead ~ and then remove the insides carefully so that the bottoms are still sealed.
- Fill the tomatoes with the avocado medley, and garnish with a bit of cilantro.
Another option for how to use the avocado medley — see the picture at right? All I did was scoop the medley on top of spring greens then top it all off with some oil and vinegar. Then, VOILA, a whole different meal was created.

No cooking the corn I take it? Just remove the kernels from the cob?
Funny, isn’t it?! You don’t need to cook it ~ just cut ‘em right off and enjoy!! You might be surprised just how yummy raw corn on the cob is. Craziest thing!

Is there any way to”preserve” fresh cilantro? I usually throw away most of the bunch because it doesn’t last well, i.e. hours rather than days.
Lemon helps preserve pretty much anything — I have an awesome salad dressing I whip up when I have extra herbs I want to use — just throw the herbs into a creamy base (I often do raw cashew) and add some lemon or lime, along with some sea salt. DEE LISH!
I hope that is a help to you! We actually ate the stuffed tomatoes tonight here at the Raw B&B+ and TOTALLY enjoyed them!

Where do you find your non GMO corn?
Really depends on where you are located. You can often find non-GMO and organic FROZEN corn then thaw it if you can’t get organic that is fresh.
how many tomatoes?
Ya barely caught me before shutting down the computer! lol!
About 6-8 is great (I should have specified that!) BUT either way the medley is AMAZING to have on its own or on top of a salad or in a wrap. It’s SO GOOD you won’t mind if you have extra. Promise! ENJOY!!
I have a recipe similar to this one, but i use avocado instead of tomato as the dish, and tomato inside rather than avocado … i use raw corn, tomato, cilantro, lime juice, jalepeno, salt, pepper, and garlic powder … mix and dish into the avocado halves … obviously, the avocado is peeled and therefore a little messy so u can serve this dish with a piece of romaine wrapped around it .. its absolutely delicious and beautiful to look at!
Sounds pretty yummy to me!! Something I’d love to play around with — anything with the sort of Mexican feel to it I totally enjoy. Plus I’m obsessed with avocados so I’m really glad you shared your recipe!!
