{recipe} Super Easy Garden Salad & Almost Pate

Almost a PateALMOST PATE

I make a really lovely pate that we include in the DVDs and our teachers teach in the Uncooking 101 classes. It’s crazy easy to make… but I wanted to change it up and use some cauliflower. Thus this absurdly easy “almost pate”. I put the following approximate ingredients. (I’ll happily measure next time, but this was mostly just a throw together that happened to be worth sharing!)


1 cup sunflower seeds
1 cup roughly chopped cauliflower
1 cup roughly chopped carrots
2 Tbsp olive oil
1 tsp salt


Food process the carrots first. (Always put carrots first!) Next add the remaining ingredients, and continue to process until the desired texture is reached. (I like there to still be a touch of crunch usually… although sometimes I want a more finely processed and oily mix. Just depends on the day!)


So, I ended up making a yummy salad to go along with the pate, and it took so little time it was ridiculous. I had set aside the carrots and some small chunks of cauliflower when I was preparing the almost pate above, so those were ready with no extra effort. Here is what I included in the salad… Again, I am making approximations that are probably pretty accurate, but I don’t want to mislead you. I did NOT measure this! I’m backtracking to share because so many of you wanted the recipe. :-)


3-4 cups spring mix
1/4 cup processed carrots
5 mushrooms, sliced
1/4 cup sunflower seeds
1/8 cup small pieces cauliflower
2/3 cup almost pate from above
Red pepper, sprinkled on to taste
Oil and vinegar to taste

Voila. I love to make sure the colors are appealing to me in a salad, so I will often have carrots chopped already. I usually throw them in a food processor every other day or so. (Longer than that, and the level of freshness is not the same.) I do the same with other veggies, making it easy to at any time throw together a colorful, flavorful, appealing salad in a few minutes, tops.
