{recipe} Super-Easy, No-Measure Almond Milk

1/ Put 2-ish cups almonds, soaked* in the blender.

2/ Cover them with water up to double their height in the blender.

3/ Add a big glop of date paste** or your preferred sweetener of choice, to taste.

4/ Add some vanilla bean or vanilla extract, to taste, as well as a pinch of salt.

5/ Blend, then strain with a nut milk bag***.


*SOAKED ALMONDS: Soak almonds in filtered water for 8 hours, then rinse well. This removes the enzyme inhibitors and makes them much more easily digestible, as well as sweeter!

**DATE PASTE: Soak some dates in just enough water to cover them up. Then blend after pitting the dates.

DATE PASTE TIP: This is great to just have on hand to toss into smoothies, milkshakes, recipes needing a hint of sweet, etc. Once you make it, it stays fresh for up to 1-2 weeks in the refrigerator.

***NUT MILK BAG: If you don’t have a nut milk bag on hand, you can use a cheesecloth OR get a 1-gallon mesh paint strainer bag. A paint strainer bag should cost you about $1 or so at a place like Lowe’s or Home Depot, or any commercial paint store. This will come in handy over and over for straining juice, nut milks, or anything else you don’t want to be full of pulp.
