I was attempting to make a nut-free pie per the request of a reader, as well as because I simply wanted a lighter version that was still super sweet and fun to eat. This is what I came up with, and for those of you who do 80/10/10 (a low-fat, high-fruit version of raw food), you may enjoy this recipe! Either way, it was DELISH!!
2 cups dates, pitted
2 cups chopped apples
1 lime, juiced
3 apples, cut into small cubes
Lime juice (optional)
1. Food process the base ingredients until they are chunky but well processed.
2. Cut the apples into cubes for the toppings.
3. Scoop the base into a glass, then add the apples on top OR include multiple layers. Add lime juice and/or cinnamon on top.
