One of the things I love about raw food is the versatility of recipes. It’s absurd what you can do!
I used the sour cream (with only FOUR ingredients) from my creamy salt & vinegar kale chips for dressing on my salad today, and it was DELICIOUS!
INGREDIENTS (SOUR CREAM)
1 1/2 cups cashews, soaked for 8 hours in 1 cup water
1/2 cup apple cider vinegar
1 1/2 tsp sea salt
INSTRUCTIONS
Blend fully in a high-speed blender (or longer in a home blender, taking a pause if needed). It should be niiice and creamy in the end.
SALAD INGREDIENTS
3 cup mixed greens
1 avocado, diced
1-2 carrots, sliced
1/2 cup broccoli, chopped
DRESSING INGREDIENTS/INSTRUCTIONS
2 T sour cream
Drizzle with olive oil, apple cider vinegar, pepper, and sea salt
Yup, that’s it. It was delicious too! SHOCKING how you can just throw a few items together for a lovely and filling salad. Having a pate or something creamy on hand is the KEY to whipping something fabulous together in no time!
