It’s breakfast time (i.e. NOT when I eat salads) yet I’m toootally drooling at this recipe from Callie {rawxy}. First of all, it’s Thai-inspired awesomeness. Second of all, it just sounds so good in general! And separate from the Drool Factor, the ingredients are all easy to find. I love that!
You know what it means? Most of us can actually make it without substituting lots of stuff and ending up in, say, Australia instead of Thailand when that fork hits our lips! Haha!
THAI TOMATO SALAD INGREDIENTS
9 campari tomatoes (camps are about the size of golf balls) (diced)
4 pickling cucumbers (or, 1 large english) (chopped)
1 red bell pepper (chopped)
1 yellow pepper (chopped)
.5 red or yellow onion (diced)
1 avocado (chopped)
handful of freshly chopped cilantro
INSTRUCTIONS: Combine all ingredients together in a bowl, set aside.
DRESSING INGREDIENTS
.25 C lime juice
2 T sesame oil (I used un-toasted for a neutral flavor)
1.5 T tamari (reduced sodium)*
1 t miso
1 packet of stevia
.5 t red chili paste (1 t if you prefer more spice)
INSTRUCTIONS: Whisk all ingredients together and pour of salad. Serve immediately, or let marinate in refrigerator.
*Note from Eva Go for the tamari if you would prefer, but I want to also offer you an alternative. I’ve been using these awesome soy-free truly raw liquid coconut aminos from Coconut Secret in place of it. It works superbly, but it’s just a touch sweeter because it doesn’t have as much salt. Your choice, just throwin’ that out there for ya in case you like to avoid soy!
