I just HAD to share this recipe, even though it’s not my own. My friend Michael OK’d me sharing his throw-together creation.
ICE CREAM INGREDIENTS
1 young Thai coconut’s meat (enjoy the water separately!)
1/2 frozen mango
4 ice cubes which came from the watermelon smoothie’s leftovers (see below)
WATERMELON SMOOTHIE INGREDIENTS
1 small watermelon (about 4 cups of watermelon)
1/2 cup orange zest (use up those whole oranges!)
1/4 ginger shavings
INSTRUCTIONS
For the smoothie: Blend and serve! Any leftovers, just pour it into an ice cube tray for a mini treat later on.
For the ice cream: Blend and serve! No need to even use an ice cream maker, unless you feel so inclined to get juuust the right texture.
So, funny as it is… I was here in Michael’s kitchen… and 3 minutes (no lie!) after he started prepping for this ice cream, it was just DONE! It prompted a great conversation about how easy this really is! So the funny part is… little did he know… I was not typing up the recipe but his words. I just love this, couldn’t help but note it! In action — exactly how I wish everyone out there KNEW that this is sooo far from complex — these are the words straight from Michael.
A little background for you on Michael… He has been raw for less than a year, managed to kick alcohol, cigarettes, and all processed foods, lost more than 75 pounds, and has really just turned his life around. Now he’s planted this wonderful garden, is meditating, doing yoga, and really inspiring the heck out of me!
I’m just amazed at how quickly you can come up to speed with stuff [in reference to raw food being easy]. Of course, I’ve had you and Stacy as advisors. You make commitments, you know, but it’s just FUN! It’s so fun!
And I’m never getting an ice cream maker! I love how the Vita-Mix just takes care of things, I really do.
