{recipe} Chia Seed Pudding

a.k.a. the snack that both the kids and I love and can be made to look festive! Great pre-office party snack! ~ Mia Moran.

Chia Seed PuddingChia Seed Pudding
Servings: About 4 1/2 cups

Measuring cups and spoons
Mason jar (big enough for 4 1/2 cups of liquid)

1/4 cup chia seeds
1 cup raw cashews, soaked for 1-3 hours
3 cups filtered water
3 pitted dates
1 Tablespoon vanilla extract
1 teaspoon ground cinnamon
sea salt (to taste)

1. Place the chia seeds in the Mason jar.
2. Place the rest of the ingredients in a blender and blend on high speed until smooth.
3. Pour the cashew mixture into the jar and shake very well, so no seeds are sticking to the jar.
4. Place in the refrigerator overnight.

Serve alone or with fruit. Pomegranate is a fantastic holiday twist, as are cranberries!

I very often double the recipe, as it goes fast in our house.

It lasts for 3-4 days in the fridge.
