{recipe} Chocolate Chia Pudding

It is just AWESOME what Heather Pace did with Chia here. You can easily sub out the cacao for carob if you are at all sensitive to chocolate, friends. Either way, this is quite the breakfast or snack.

Chocolate Chia Pudding


  • 2 Tablespoons chia seed
  • 1 cup water
  • 1 cup ice cubes
  • 2-3 Tablespoons cacao powder (or carob!)
  • 1 1/2 tablespoon lucuma powder
  • 1 teaspoon mesquite powder
  • Vanilla Stevia (or other sweetener), to taste


  • Shake the chia and water together in a glass jar or plastic container, and then set aside for at least 10-20 minutes, allowing the chia to swell.
  • Blend all ingredients together until smooth and creamy.

Tip: Let the chia soak in the water overnight in the fridge, and then whip it up in a jiffy for breakfast!
