{raw vegan recipe} Spaghetti Bolognese

Spaghetti BologneseThis lovely spaghetti is filling, nourishing and super delicious. It’s also pretty simple and takes only about 20 minutes to whip it up. YUM!

EQUIPMENT
Food processor
Spiralizer OR veggie peeler

NOODLES
2 zucchini (aka courgettes)

GARNISH
Black olives, chopped

SAUCE INGREDIENTS
1 cup tomatoes
1/2 cup sun-dried tomatoes
1/4 onion, chopped
1/2 cup chopped fresh basil
2 Tablespoons fresh rosemary leaves
2 Tablespoons olive oil
1 date
1 teaspoon natural salt
Pinch ground pepper
1/2 cup chopped walnuts (optional)

INSTRUCTIONS FOR THE NOODLES
1. Peel the zucchinis (optional!).
2. Use the spiraliser to make the noodles, or use a vegetable peeler to make strips from the flesh of the zucchinis like fettucini noodles.

INSTRUCTIONS FOR THE SAUCE
1. Add all ingredients, except the walnuts, to the food processor and blend until you have the consistency you desire.
2. If you want extra texture to your bolognese, stir through the walnuts

ASSEMBLY
1. Pour your sauce over the zucchini noodles, and mix thoroughly.
2. Garnish with some chopped black olives.
